Inspired by the classic Neopolitan ice cream, this is 3 luscious layers of no-churn flower-infused vegan ice cream. Infused with mood lifting herbs, this treat is not only deliciously satisfying, it also packs a powerful uplifting punch! 

This is a perfect and simple dessert for any occasion!



1 13.5 ounce can of full fat coconut milk

1 1/2 cups “raw” cashews

1/2 honey or maple syrup 

Pinch of sea salt


Blue Vanilla:

2 teaspoons Anima Mundi Butterfly Pea Powder

1/8 teaspoon Anima Mundi Vanilla Powder

Option: 1/2 cup lilac flowers

Chocolate Happiness:

1 teaspoon Anima Mundi Happiness Powder

1 teaspoon Anima Mundi Cacao Powder

Strawberry Rose:

1/2 cup fresh or frozen strawberries, chopped

1 teaspoon Anima Mundi Rose Powder


  1. Place cashews in a heatproof bowl and pour boiling water over the top, soaking for 20 minutes. Strain cashews and place in a high speed blender. 
  2. If adding lilacs, warm the coconut milk to near boiling and pour it over the top of the lilac flowers for 20 minutes. Strain the flowers and add the coconut milk to the blender.
  3. Add all base ingredients to the blender and blend on high until completely creamy. Divide into three bowls.
  4. In each bowl, add each of the layer ingredients and blend each separately until creamy. 
  5. Add the blue layer first and pour into clear glasses or small bowls and freeze for 10-15 minutes.
  6. Next, pour the chocolate and happiness layer into the glasses on top of the frozen blue layer. 
  1. Finally add the strawberry and rose layer and sprinkle on rose powder, edible flowers and a slice of strawberry to finish. Freeze until just solid, about 10-15 minutes, and serve.
