INGREDIENTS:
- 1.5 cups frozen or fresh raspberries
- 4 cups orange juice, divided
- 8 Tbsp grass-fed beef gelatin
- Pinch of salt
- 2 Tbsp honey or other sugar (optional)
- 2 Tbsp Mangosteen Hibiscus
- 1 Tbsp Collagen Booster Superfruit Bliss
- Juice of 1 lemon or lime
- A few drops Happiness Tonic per jelly
DIRECTIONS:
- Blend the raspberries with a small amount of orange juice. If you don’t like to feel the raspberry seeds, pass the juice through a sieve.
- Mix the gelatin with 1 cup orange juice and let it bloom for 5-10 minutes.
- Heat up the rest of the juice and the blended raspberries over low heat. Add the bloomed gelatin and salt, stirring constantly until it dissolves, for 5-10 minutes. Remove from heat.
- You can dissolve some honey at the end of the cooking if you would like the gelatin a little sweeter.
- Let the mixture cool down briefly, and then add the Mangosteen Hibiscus, Superfruit Collagen Booster, and lemon juice.
- Distribute the liquid in ice moulds of your favorite shape, or a large baking pan, and add a few Happiness drops to each little shape. If using a baking pan, add 1-2 droppers of Happiness into the pan.
- Let cool for at least 4 hours, or refrigerate to speed up the process.
- Cut your jelly into shapes with simple cookie cutters, or un-mould it if you used an ice cube mould. To store, keep refrigerated in an airtight container. Yum!
