Ingredients:

2 broccoli crowns

1 head cauliflower

1 onion

4 garlic cloves

2 Tbsp olive oil

1 Tbsp Italian seasoning

2 Tbsp nutritional yeast

¼ cup Coconut Cream Powder
-
1-2 handfuls spinach

3 cups water or vegetable broth
Directions:
Prepare the Vegetables:
Cut the broccoli into florets and chop the cauliflower into small pieces. Dice the onion and mince the garlic cloves.
Sauté the Vegetables:
In a large pot, heat the olive oil over medium heat. Add the broccoli, cauliflower, onion, and garlic all at once. Sauté for about 8-10 minutes, stirring occasionally, until the vegetables begin to soften and the onion becomes translucent.
Blend the Soup:
Once the vegetables are sautéed, transfer them to a blender. Add the water or vegetable broth, nutritional yeast, Coconut Cream Powder, spinach, and Italian seasoning to the blender. Blend everything together until smooth and creamy. If the soup is too thick, you can add more water or broth to reach your desired consistency.
Taste and Adjust:
Taste the soup and adjust the seasoning. Add salt, pepper, or more Italian seasoning if needed.
Serve:
Pour the soup into bowls and enjoy! You can garnish with a drizzle of olive oil or extra nutritional yeast if you'd like.
