KNIFE-CUT IMMORTALITY Noodles with Reishi

Ingredients:

  • 3 cups flour
  • 4 tsp Reishi Powder
  • 3 eggs
  • 3 Tbsp olive oil
  • Salt to taste

For the sauce:

  • 2 egg yolks
  • 1 bunch asparagus, chopped
  • 1 yellow onion, sliced thin
  • 2 garlic cloves, minced
  • 1/2 cup grated pecorino cheese (plus more for garnish)
  • 1 cup pasta water

Instructions:

1. Mix flour and Reishi Powder on a clean surface. Create a well in the center.

2. Add eggs, olive oil, and salt to the well. Gradually mix in the flour.

3. Knead the dough, remove air bubbles, and let it rest for 20 minutes.

4. Roll out the dough. Fold the top and bottom edges of the dough twice, creating layers. and cut it into thin strips.

5. Cook onions, garlic, olive oil, and salt until golden brown. Add asparagus and cook until tender. 

6. Boil salted water and cook the pasta. Reserve 3/4 cup pasta water.

7. Mix pasta water, egg yolks, pecorino cheese, lemon zest, pepper, and cooked pasta in the pan.

8. Serve with lemon zest and cheese garnish.
