We're back at it with a fun way to integrate plant medicines into a household staple dish for many: pancakes! Beyond being healthy, they also taste amazing! They are fluffy, wholesome, tender, hearty, nutrient-dense, satisfying, simple, and FAST. They're perfect for the whole family!

INGREDIENTS
270g (1.8 cups) organic wheat flour (or gluten-free mix)
1 tsp baking soda
1 tbsp coconut sugar
1/4 tsp salt
3 Tbsp of ground flax seeds mixed with 9 Tbsp water (this is a "flax egg" - You can also replace with 1 large egg if you eat eggs)
400 ml (14oz) plant-based milk of choice
50g (1-2Tbsp) coconut butter (or coconut oil) for the pan
SYRUP
Mix 1/2 measuring cup of (runny) honey or maple syrup with 1 Tbsp Mushroom Mocha Milk
TOPPINGS
Toasted or raw hazelnuts
Fresh seasonal fruit of choice
