Ingredients:
- 2 cups whole oats
- 2 cups spinach or fresh nettles
- 1 cup cooked squash, pumpkin, mashed banana or applesauce
- 1/3 cup maple syrup
- 1/4 cup avocado oil or melted butter, etc.
- 1/4 cup oat milk or milk of choice
- 2 eggs, whipped or 2 flax eggs
- 2 heaping Tbsp Moringa powder
- 1 tsp vanilla extract
- 1 tsp cinnamon
- 1 tsp baking soda
- 1 tsp sea salt
- Optional : 1/2 cup blueberries or dark chocolate chips
Instructions:
1. Preheat the oven to 350F and line a 12 muffin tin with parchment cups.
2. Place everything except the blueberries or chocolate chips in a high-speed blender and process on high until smooth.
3. Mix in the blueberries and fill the muffin tins 3/4 full.
4. Bake for about 15-20 minutes, checking at 15 minutes to see if the center is cooked through. Allow to cool before eating.
5. Enjoy!
