COSMIC PINWHEEL COOKIES Dipped in Chocolate and Flowers

These Cosmic Pinwheel Cookies are a celestial treat! Made with our Rose, Matcha, Liver Vitality and Vanilla powders, they will steal the show at any Galentine's or Valentine's gathering. They also make the perfect gift from you to you any time of year, as they're packed with plant potency for beauty, detox, and vitality!

Our ceremonial Matcha is rich in antioxidants and provides a creamy, nutty, well-balanced umami flavor; Liver Vitality can harmonize digestion and support the gastrointestinal tract; Rose has been traditionally used to lower inflammation and support heart health while uplifting the spirit; and while Vanilla is a classic herb used in baking, it also can improve overall health by reducing inflammation, regulating metabolism, and supporting the nervous system.

INGREDIENTS:

  • 2 ¼ cups gluten-free 1:1 flour blend
  • 1 cup vegan butter, cubed and at room temperature
  • ½ cup powdered sugar (or monk fruit powdered sugar substitute)
  • ¼ cup maple syrup
  • 2-3 Tbsp Rose Powder
  • 2 tsp Liver Vitality Greens
  • 1/2 tsp Matcha
  • Zest of 1 Lemon
  • ½ tsp sea salt
  • 1 tsp Vanilla powder
  • For a deeper rose color: add 1 teaspoon of "black" or purple carrot powder or natural food coloring of your choice
  • For green color: add 3 droppers of concentrated liquid Chlorophyll or leave it out and substitute 1 teaspoon vanilla extract for the liquid 

Chocolate Rim:

  • 3-5 Tbsp Dark Chocolate, chopped & melted
  • Assorted edible flowers for rolling the cookies - blue lotus, rose petals, calendula, nettle seeds or crushed pistachios or finely chopped hazelnuts or nuts/seeds of your choice

Directions:

1. In a large mixing bowl, use a hand or stand mixer and whip together the powdered sugar and butter, and add the maple syrup, until well-combined.

2. Add the Vanilla, lemon zest and salt and mix well until combined.

3. Now add the flour and mix until the batter forms a smooth ball. Divide the ball into 2 equal halves.

4. Add one of the balls of dough back to the mixing bowl, and add the Liver Vitality powder, Matcha and concentrated chlorophyll or green food coloring for extra deep green color, mixing well until it is completely blended. 

5. Clean the mixing bowl out and dry it, and add the other dough ball, mixing well with the Rose powder until well-incorporated and pink.

6. Roll out the green dough ball to about ½ inch thickness between two pieces of parchment paper in a rough rectangle shape.

7. Now, roll out the rose dough between two sheets of parchment in the same way.

8. Using the parchment paper underneath, lay the green dough on top of pink so they are sandwiched together and touching but they have parchment on the outside. 

9. Once they are lined up, trim the sides so they make a clean rectangle, and begin rolling on the long side by using the parchment to roll them and squeezing gently to keep them together with each turn so their spiral center is forming first. 

10. Roll until they form a long tube snd until they are completely rolled together. 

11. Place in a sealed bag or container and into the freezer for 1 hour.

12. Preheat the oven to 350F and line a baking sheet with parchment paper.

13. Remove and slice the cookies in rounds, about 3/4 inches thick and place on the baking sheet.

14. Bake the cookies for 10-12 minutes; they will still feel soft! Let them cool on the cookie sheet. Meanwhile, melt the chocolate and pour it on a small plate. 

15. Have the flowers or seeds and nuts  ready and roll the cookies first in chocolate and then in the flowers. Place on parchment to harden up and enjoy!
