Ingredients:
1 Cups Cashews, soaked in boiling water for 15 minutes and strained
1/2 Cup citrus fruit pulp, scraped from orange, lemon, lime and/or grapefruit; roughly 5 fruits total
1/2 Cup Coconut Milk, full fat
1/3-1/2 Cup Maple Syrup, depending on the level of sweetness you want
1 Teaspoon Anima Mundi Vanilla Powder
1 Teaspoon Anima Mundi Mangosteen Hibiscus
2 Teaspoons Collagen Booster Liquid
1 Teaspoon Collagen Booster Superfruit Powder
Sprinkle of Sea Salt
1-2 Slices frozen watermelon, shaved on top
Optional: Topping of Edible Flowers
Directions:
1. Cut citrus fruits of choice in half lengthwise and use a spoon to scrape out the pulp. 5-6 fruits is perfect to give you about 6 Servings. Add 1/2 cup of pulp to the blender and then freeze the rest to save for smoothies or drinks. Save the fruit shells in the freezer while you prepare the posset.
2. Add the remaining ingredients except the watermelon and edible flowers to the blender and blend on high until smooth.
3. In a medium saucepan, heat the posset, whisking nonstop until it begins to thicken slightly, about 4-5 minutes.
4. Pour the posset into the hollowed out and frozen shells and pop them back in the freezer for about 20 minutes.
5. Remove from the freezer and shave the watermelon on top using a cheese grater. Top with edible flowers and enjoy!
