This beet and burrata salad is one of the most beautiful plates I’ve ever made. Thin ribbons of jewel-toned beetroot, a pillowy ball of burrata, toasted pine nuts, and a scattering of basil or microgreens come together in minutes, but the plate reads like something out of a restaurant menu. A touch of Black Elderberry Elixir tossed with the sliced beets brings a deep, almost wine-like sweetness while quietly supporting immune health, and a spoonful of Collagen Booster whisked into the dressing turns this from a side dish into a beauty-from-within ritual.
The beet juice in the dressing does double duty, tinting the olive oil a soft rose-red and tying the whole plate together visually. Burrata is non-negotiable here for that creamy, oozy center, but in a pinch a good fresh mozzarella will still get you most of the way there.

Beetroot Elderberry Salad Ingredients
Salad:
- 2 medium beetroots, thinly sliced (raw or cooked)
- 1 tsp Black Elderberry Elixir
- 1 ball burrata
- 2 Tbsp pine nuts, toasted
- Handful fresh basil or microgreens
Dressing:
- 3 Tbsp extra virgin olive oil
- 3 Tbsp beetroot juice
- 1 tsp Collagen Booster
- Flaky sea salt, to taste
Instructions
1. Combine: In a bowl, toss the sliced beetroot with the Black Elderberry Elixir until evenly coated. Set aside.
2. Whisk: Bring the olive oil, beetroot juice, and Collagen Booster together, whisking until smooth and well combined.
3. Arrange: Place beetroot slices on a plate, slightly overlapping. Add the burrata in the center and gently tear it open.
4. Top: Scatter the toasted pine nuts and fresh basil or microgreens over the top. Drizzle generously with the dressing, finish with a pinch of flaky sea salt, and serve immediately.
