Ingredients
Cake:
- ¾ cup (70g) almond meal
- 1 + ½ cups (180g) white spelt flour
- 1 tsp baking powder
- ½ tsp baking soda
- 1/3 fine salt
- ½ cup (120mL) extra virgin olive oil
- ¾ cup (180mL) honey
- 1 Tbsp lemon zest
- ¼ cup (60mL) lemon juice
- 2 droppers Happiness Tonic
- 2 medium eggs, at room temperature
- ½ cup (120mL) Greek yogurt, or thick coconut yogurt for dairy-free
Syrup:
- 2 Tbsp honey
- 2 Tbsp lemon juice
Matcha Cream Cheese Frosting:
- ½ cup (120g) room temperature butter, or vegan butter for dairy-free
- 225g tub cream cheese (can use vegan cream cream cheese)
- 2 tsp Matcha powder
- 1 tsp Lions Mane powder
- ¼ cup (60mL) honey
Method
1. Preheat oven to 340 F (170C). Grease and line a loaf tin.
2. Sift almond meal, flour, baking powder and baking soda into a bowl. Add salt and mix well. Set aside.
3. In a separate bowl add olive oil, honey, lemon zest, lemon juice and Happiness Tonic. Whisk for 1-2 minutes or until the honey has thinned into the mixture and everything is very uniform. Add 1 egg and whisk for 1 minute. Repeat with the second egg.
4. Pour the lemon mixture into the flour bowl. Gently fold the wet and dry mixture together until almost combined. Add the yogurt and fold through until no dry pockets of flour remain and the yogurt is evenly mixed in.
5. Pour into the prepared tin and bake for 55 minutes or until the center is cooked through when tested with a skewer. The top will look quite browned - this is normal! Honey browns quickly at this temperature. Meanwhile, mix the syrup ingredients together and set aside.
6. Cool for 10 minutes then use a butter knife to run around the rim of the cake. Using a skewer, poke lots of holes over the surface. Pour the lemon honey syrup over the cake and allow to cool in the pan for at least 1 hour, the move to a wire rack to finish cooling.
7. To make the frosting add butter and cream cheese to a bowl. Whip for 2 minutes or until pale and fluffy. Add honey and sift in matcha and lions mane. Beat again for 1 minute or until uniform.
8. Once the cake has completely cooled frost and serve.
