MUCUNA MATCHA GLUTEN Free Pie

Ingredients:

Crust:

250g GF oat or 250g oat flour

100g ground almond • 2 tbsp raw sugar

9 Tbsp butter alternative

1/4 tsp sea salt

Filling: 

1 can condensed coconut milk

3 eggs

2tbsp Mucuna

I tbsp Matcha

2 tsp starch, like tapioca • 1/4tsp foseasalt

1/4 tsp of vanilla

Instructions:

Prepare the oven at 180°

1. Blend the oats in a high-speed blender to make the flour

2. Mix the oat and almond with sugar and salt

3. Add the butter and mix to form a crumbs

4. Press the crumbs together and work the pastry as little as possible, forming a smooth ball.

5. Brush a spring pie dish with butter, dust with flour and shake the excess flour away.

6. Press the dough into the pan and prick the bottom with a fork.

7.Bake in the oven for 20 minutes or until the bottom is crispy: let it cool down.

8. Beat the eggs with a fork, add the milk and all ingredients until combined

9.Pour the mix intot h e pie crust and bake for another 17-20 minutes until the filling is firm but stillwobbly.

10. Let it cool down and decorate!
