Transform your crudités into a gourmet experience with this enchanting herbal dip, featuring the natural blue hues of butterfly pea and the healthful boost of liver vitality powder. Ideal for pairing with fresh veggies, it's a delightful mix of color, flavor, and wellness.
Ingredients:
• rainbow babe carrots
• pickled baby beets
• pickled and raw radishes
• fresh peas
• peashoots
• microgreens
• costoluto tomatoes (super sweet ridged small tomatoes)
• super fresh celery
• extra virgin olive oil
• 1/4 tsp Sea Salt
• 1/4 tsp balsamic vinegar
• 1 lemon
• 1.5 cups of naturally strained raw Greek yoghurt (full fat) or a plain vegan version of choice
Instructions:
1. Wash and cut all carrots, celery, radish and veggies that you can find at our farmers market. Here the key is length-wise for those that apply for an elegant look ;). Arrange in a circular pattern on a plate, wood or stone slab.
2. Mix 2/3 of a cup of yogurt with 1/4tsp salt, a generous dollop of EVOL and a squeeze of lemon. Add LIVER VITALITY and CORDYCEPS and mix, you can add pepper and mint for garnish.
3. Mix another 2/3 of a cup of yoghurt with BUTTERFLY PEA, a pinch of salt, a dollop of oil and 1 tsp of balsamic vinegar and mix.
4. Dip the veggies into the yogurt sauces and enjoy.
