LIFE-CHANGING BROWNIES with Vanilla Chai Protein

These no-bake, vegan, gluten-free brownies are a nourishing balance of simplicity and pleasure. Crafted with slow-simmered apples, infused with warming cinnamon, and blended into a silken truffle with dark chocolate and our Vanilla Chai Plant Protein — this recipe is a testament to the magic of "less-is-more."

Ingredients 

  • 4 medium apples, peeled and chopped
  • water 
  • 1 cinnamon stick 
  • 7 oz (200g) vegan dark chocolate bar 
  • 2-3 Tbsp Vanilla Chai Protein Powder 

Instructions 

1. Cook the apples. Place chopped apples in a tight pot with 2cm of water and the cinnamon stick. Boil covered until the apples are completely soft and mushy, and most of the water has evaporated (about 10 minutes). Remove cinnamon stick. 

2. Melt chocolate & blend. Melt the chocolate in a double boiler over your stove ( a smaller pan in a larger one filled with water). Add the melted chocolate and Vanilla Chai Protein Powder to the cooked apples. Blend everything together until completely smooth. 

3. Set. Pour into a small brownie pan, lined if necessary. Refrigerate for at least 1 night, but 24 hours is even better for the perfect fudgy texture. 

Notes 

  • The long refrigeration time is KEY: this is what creates the incredible truffle-like texture.
  • These keep for up to a week in the fridge. They can also be frozen.
  • Cut into small squares as they're very rich!
