BLUE LOTUS CHIA Pudding

At Anima Mundi, we love all things Blue! This Blue Lotus , Spirulina-infused chia pudding is the perfect way to start your day. Featuring our decadent Vanilla bean powder, this pudding is a sweet and luscious delight. Full of healthy fat and protein, this recipe also works as a snack or dessert.

Ingredients:

Instructions:

  1. In a small saucepan, gently heat the coconut milk over low heat until warm but not boiling.

  2. Add the Blue Lotus petals and let steep for 10–15 minutes, keeping the heat low to avoid boiling.

  3. Strain out the petals and pour the infused coconut milk into a mixing bowl or jar.

  4. Whisk in the blue spirulina, vanilla bean powder, and maple syrup until fully combined.

  5. Stir in the chia seeds, mixing well to prevent clumping.

  6. Cover and refrigerate for at least 4 hours, or overnight, until thick and pudding-like.

  7. Stir before serving and top with fresh fruit of your choice.
