At Anima Mundi, we love all things Blue! This Blue Lotus , Spirulina-infused chia pudding is the perfect way to start your day. Featuring our decadent Vanilla bean powder, this pudding is a sweet and luscious delight. Full of healthy fat and protein, this recipe also works as a snack or dessert.

Ingredients:
- 14oz full-fat coconut milk
- 2 Tbsp Blue Lotus
- ½ teaspoon Blue Spirulina or Spirulina
- ½ teaspoon Vanilla bean powder
- ¼ cup maple syrup
- ⅓ cup chia seeds

Instructions:
- In a small saucepan, gently heat the coconut milk over low heat until warm but not boiling.
- Add the Blue Lotus petals and let steep for 10–15 minutes, keeping the heat low to avoid boiling.
- Strain out the petals and pour the infused coconut milk into a mixing bowl or jar.
- Whisk in the blue spirulina, vanilla bean powder, and maple syrup until fully combined.
- Stir in the chia seeds, mixing well to prevent clumping.
- Cover and refrigerate for at least 4 hours, or overnight, until thick and pudding-like.
- Stir before serving and top with fresh fruit of your choice.
