I was born and raised in Costa Rica and have extensively studied several healing traditions, alongside master herbalists and shamans for 13+ years. I started Anima Mundi in Brooklyn NY as a means to bridging ancient remedies to the modern world. My heart is to continuously create a farm to pharmacy experience that not only creates a sustainable system of healing, but contains within its core the pursuit to wholeness. As we celebrate MOOD and ENERGY herbs this week, we wanted to reshare the the awesome recipe created by @alison__wu 💚Matcha Latte Gummies💚 Recipe: 1 1/2 cups unsweetened coconut milk (i get mine fresh from the farmer’s market - the higher quality the better the flavor!) 2 tbsp agar agar powder 1 tsp @animamundiherbals organic matcha matcha powder (ceremonial) 1 tablespoon maple syrup or sweetener of choice (optional) 1. In a small saucepan, whisk coconut milk and agar agar powder over medium heat. Bring to a boil. Remove from heat after boiling for about a minute. 2. Pour a small amount of the mixture into a bowl and add the matcha. Whisk until smooth then add back to the saucepan and whisk to combine. 3. Place molds on a baking tray that will fit into your refrigerator. While mixture is still hot, but not scalding, use the dropper included in your gummy bear mold to drop the liquid into the little bears until the mold is completely full. Repeat until all molds are filled. 4. Transfer tray to the fridge and let harden for 10-15 minutes. Take out one popsicle at a time and using a large spoon, pour the melted chocolate over the popsicle, coating it front + back. 5. Immediately add the blue lotus sprinkle or toppings of your choice and place on a parchment lined plate and then back in the freezer, unless you’re going to eat it right away. 6. 🍄🌬️ Creamy Mushroom Mocha Milk Ice Cream 🌬️ Have you ever wanted to make a DELICIOUS and easy shroomy ice cream!? ✨ Great way to get the shroomies in if you’re not in love with the flavor (and for the kiddos too). And! If youre not into making ice cream, just sprinkle any of our adaptogenic shroom powders to get your load. 🍄 Crafted with love and adorned with the magic using our beloved longevity milk aka Mushroom Mocha Milk! (mmmhmmm) This vegan hot chocolate ice cream created by @theallnaturalvegan is a divine fusion of velvety chocolate, 7 medicinal mushroom extracts and coconut cream. Ingredients: * 1 cup raw cashews * 1 cup medjool dates * ½ cup water (reserved from soaked dates and cashews) * 1 can full-fat coconut milk * 3 tbsp @animamundiherbals Mushroom Mocha Milk * 1 tsp vanilla extract * 1 tbsp tapioca syrup * 3 tbsp cacao powder (optional) * Crushed candy canes * Vegan whipped topping Directions: 1. Prepare the Cashews: Soak the raw cashews and Medjool dates together in a large bowl full of water for at least 4 hours or overnight (overnight is best, especially if you are not using a high-speed blender). Drain all but ½ cup of the water out before making the ice cream base.

Recipe by our dear Sarah of @sculptedkitchen BANANA BLUEBERRY BREAD🍞🫐🦋 2 flax eggs (1 tablespoon of chia/flax meal with 8 tablespoons of water) 1 cup of coconut sugar or granulated sugar 3/4 cup of mashed banana (about 1 1/2 1/2 cup of coconut oil, melted 1/2 cup plus 1 tablespoon of plant based milk 2 cups of all purpose flour 2 tsp of baking soda 1 tbsp of @animamundiherbals QI Protein Powder A dash of salt 3/4 cup of blueberries (tossed with 1 tablespoon of flour) FROSTING 1 can of whipped coconut cream 2 1/2 cups (I know!!) of icing sugar (optional!!) 1 tbsp of wild blueberry juice (I blended 2 cups of wild blueberries and sieved the liquid) 1 tsp of @animamundiherbals Black Elderberry Syrup 1 tbsp of @animamundiherbals Coconut Cream Powder 1 tsp of blue spirulina (optional) METHOD: Preheat your oven to 350F. Prepare 3 mini loaf pans. (I just added it all into one bowl tbh) Add all your wet ingredients and mix well. Add your dry ingredients and stir until just combined. Fold in your blueberries carefully. Bake for 75 minutes for a loaf pan. Watch carefully and check towards the end to see if it’s cooked. FROSTING Whip your coconut cream with your hand held blender Add the rest of your ingredients. Keep in the fridge until ready to use. Spread the frosting across your cooled banana bread Garnish with berries.
