Crust:
- 1 cup pistachios
- 1½ cups Medjool dates, pitted
- 1 tsp vanilla bean powder
- ½ tsp sea salt
Moringa Cheesecake Filling:
- 1½ cups cashews, soaked and drained
- 2 cans coconut cream, thick white part only
- ½ cup coconut butter
- 1–2 Tbsp Anima Mundi Moringa Powder
- 1 tsp vanilla extract or vanilla bean powder
- ½ cup maple syrup
Belly Love Whipped Topping:
- 1 cup coconut cream or whipped topping of choice
- 2 tsp Anima Mundi Belly Love Powder
- ½ tsp vanilla bean powder
- 2 Tbsp maple syrup (omit if using a sweetened whipped topping)
- 1–2 tsp beetroot powder, optional, for a deeper pink color

Method
- Make the crust: Add the pistachios, Medjool dates, vanilla bean powder, and sea salt to a food processor. Process until the mixture is finely chopped and sticks together when pressed between your fingers.
- Press the crust: Transfer to the bottom of a springform pan and press firmly into an even layer. Place in the refrigerator while you prepare the filling.
- Make the moringa filling: Add the soaked cashews, thick coconut cream, coconut butter, Moringa Powder, vanilla, and maple syrup to a high-speed blender. Blend until completely smooth and creamy.
- Assemble: Pour the moringa filling over the prepared crust and smooth the top into an even layer.
- Chill: Place in the refrigerator for at least 6–8 hours, preferably overnight, until completely firm and set.
- Make the Belly Love topping: Whip the coconut cream until light and fluffy. Add the Belly Love Powder, vanilla bean powder, maple syrup, and optional beetroot powder. Whip again until evenly combined and fluffy.
- Decorate: Once the cheesecake has fully set, remove from the springform pan and spread or pipe the Belly Love whipped topping generously over the top.
