Super Easy + Healthy Marshmallows

RECIPE

INGREDIENTS:

  • 1 c cold water, divided
  • 3/4 c honey
  • 1/4 c organic grass-fed beef gelatin
  • 1 tsp Vanilla
  • tapioca flour or other starch for dusting

DIRECTIONS: Add gelatin and 1/2 c cold water to stand mixer bowl. Stir gently; gelatin will bloom and absorb the water. Add honey and other 1/2 c water to pot and heat to at least 130 degrees C. Attach wiping wand and start stirring at low speed; pour honey mix into gelatin and stir slowly until just combined. Increase to max and beat for 8-15 minutes. The mixture will magically turn into a sticky foam!

While your mixer works, line a 6" baking pan with parchment paper. When mixer struggles, your fluff is ready; add Vanilla, and then quickly turn off mixer. Quickly spread fluff into baking pan. Let set in the fridge for 2 hours. When ready, use scissors to cut into cubes and lightly dust with tapioca flour.
