Cordyceps Rose Spiced Latte

Recipe

INGREDIENTS:

  • 5 cardamom pods
  • 3 whole cloves
  • 1 star anise (optional)
  • 5 black peppercorns (optional)
  • 1 c water
  • 3+ slices ginger
  • 1 cinnamon stick (broken up)
  • 2 Tbsp black tea
  • 1 Tbsp Rose petals
  • 1 tsp Cordyceps
  • 1/2 tsp Coconut Cream powder
  • 1 c milk of choice
  • sweetener of choice

DIRECTIONS: Lightly crush spices together and place in a small pot with 1 cup of water. Add Ginger, Cinnamon, Cordyceps, and black tea. Bring to a boil. Turn off heat and let steep at least 10 minutes. Once the heat is mild, add the Rose petals. Strain and add milk and Coconut Creamer and whisk intensively to froth it up. Add sweetener to taste. Enjoy!

Rose & “White Chocolate” Crystals White chocolate is a rich, creamy treat & this recipe came to fruition from my desire for a version free of dairy & refined sugar, with rose and warming spices. I added in some favorite adaptogens, including cordyceps mushrooms & a rose chai blend of adaptogenic herbs from animamundiherbals .  Tahini or cashew butter can be used; both are delicious. I went with tahini because sesame is one of my favorite ways to add a dose of calcium to my diet. In just 2 Tablespoons of tahini, you get about 14% of your daily value of calcium. Typically, white chocolate is made with milk, cocoa butter,  and loads of white sugar, so hope you’ll enjoy this update to an old favorite! El ponerle un NO a algo que nunca había probado y pensar que los vegetales solo se podían comer en el almuerzo, en la cena o que solo se pueden comer salados. Pero poco a poco empecé a probar nuevas combinaciones, nuevos sabores. Hoy en día no pasa un día en el que no nutra mi cuerpo con algún tipo de vegetal. Y no solo para el lunch o el dinner. ﹏ Después de unos días de estar fuera de casa y haber salido un poco de mi rutina, mi cuerpo me pide algo calientito y deliciosamente 😋 hecho en casa con todos mis adaptogenos y hierbas que tengo en mi despensa. Nada como el placer y comodidad de tener su propio espacio. Para este segundo dia de otoño 🍂 🍁🍂🍁🌻🍁🍂🌾, acá en miami salió un hermoso sol ☀️ pero ya sin tanta humedad. En mi bowl: 1/4 taza de avena remojada toda la noche 1 tsp chai masala (cardamom, black tea, cinnamon, bay leaf, all spices, fennel seeds) 1/2 taza de agua 1/2 taza de la leche vegetal la que prefieras 1 tbsp flaxseed 1/2 tbsp chia seed molida 1 tsp cordyceps animamundiherbals 1 tsp chaga animamundiherbals Primero pones el agua con el masala chai, cuando vez que empieza hacer burbuja (hervir) agregas la leche y la avena, usas una cuchara para darle vuelta a todo, cuando veas que se empieza a espesar agregas la leche, flaxseeds y las semillas de chia (yo uso la chia molida para que ayude mejor con mi digestion). Cuando veas que todo esta uniforme y cocido. Apagas el fuego. Nota: Pones un poco de música, mueve tu cuerpo y canta mientras vas cocinando. Makes 12-16 Ingredients 4 cups shredded coconut 1/3 cup coconut butter, softened* Pinch salt 1/2 cup coconut cream 1/2 cup rice malt syrup 220g vegan dark chocolate 1 Tbsp coconut oil (or extra coconut cream) 2 tsp chaga powder (or Reishi, Cordyceps or mushroom blend of choice) Method 1. Add all the filling ingredients to a high-speed blender and pulse to combine (this can be done with your hands, but a food processor creates a better texture. Press filling into a 15-20cm lined or greased tin, and set in the freezer for 4 hours. 2. Add chocolate, coconut oil and chaga to a heat proof bowl. Set the bowl over a pot of just simmering water, and melt. Stir occasionally, and once the mixture is liquid, remove from heat. 3. Remove coconut bars from the freezer and tin. Cut into desired serving sizes, then use a fork to dip into the melted chocolate. Place on a lined tray and repeat with remaining bars. Set in the fridge, then store in an airtight container in the fridge (for up to 1 week) or the freezer (for up to 3 months). *In colder climates, you may need to soften the coconut butter. FIRE CIDER >> A delicious immune-boosting health tonic using classic pantry staples such as fresh horseradish, ginger, garlic, onions, cayenne pepper, raw apple cider vinegar and honey. If you're missing some of these ingredients, not to worry it's absolutely adaptable and easy to switch out some of the seasonings and herbs. I love adding in other antivirals like cats claw, Pau D'arco or Dragons Blood for an additional anti-viral + immune protective punch🩸💦 . Fire cider by @eatingbirdfood INGREDIENTS 1/2 cup freshly peeled and grated ginger root 1/2 cup freshly grated horseradish root 1 medium onion, chopped 10 cloves of garlic, crushed or chopped 2 organic jalapeño peppers, chopped 1 lemon, zest and juice 2 Tablespoons dried rosemary leaves 1 Tablespoon turmeric powder or 2 Tablespoons freshly grated turmeric root 1/4 teaspoon cayenne powder organic unfiltered apple cider vinegar 1/4 cup raw honey, or to taste Add 2tsp of Pau d’Arco or adaptogen of choice . INSTRUCTIONS Add ginger, horseradish, onion, garlic, jalapeño peppers, lemon zest and juice, rosemary, turmeric and cayenne powder into quart-sized glass jar.💦 Pour apple cider vinegar in the jar until all the ingredients are fully covered and the vinegar reaches the top of the jar. You want to be sure all the ingredients are covered to prevent spoilage. 💦 Use a piece of natural parchment paper under the lid to keep the vinegar from touching the metal, or use a plastic lid if you have one. 🧄 Shake jar to combine all the ingredients and store in a dark, cool place for 4-6 weeks, remembering to shake the jar a few seconds every day. After one month, use a mesh strainer or cheesecloth to strain out the solids, pouring the vinegar into a clean jar. Be sure to squeeze out as much of the liquid as you can. This stuff is liquid gold! The solids can be used in a stir-fry or you can compost/discard them. 🧄 Add honey to the liquid and stir until incorporated. 👅 Taste your fire cider and add more honey if needed until you reach your desired sweetness. 🏺Store in a sealed container in the refrigerator or in a cold, dark place. Drink 1-2 Tablespoons when needed. . . ❤️Share with loved ones that need some immune love ❤️

INGREDIENTS 1 large onion, chopped 1 medium-bell pepper 4–6 garlic cloves 2 teaspoons coconut oil or extra virgin olive oil 8 cups water or homemade veggie stock 1 large sweet potato, peeled and cut 2 large carrots, peeled and sliced A handful of fresh medicinal mushrooms, like maitake, shiitake, lion’s mane, or agaricus* 1 small piece of fresh ginger, minced 1–2 teaspoons American or Korean ginseng powder* 1tsp Chickpea Miso (or miso of choice) 1 Tbsp of our Adaptogenic Mushroom Powder 2 jujube dates (or sub with a thumb’s worth of licorice) Note: American + Chinese ginseng are in extinction, so only use them if you are in serious need of rejuvenation. Be sure to source from a trustworthy farm, and do not support wildcrafting as that is depleting wild resources. Or better, easily sub with Siberian Ginseng (Eleuthero) or Brazilian Ginseng Aka ‘Suma’. *If you don't have access to 7 🍄 blend, you can do a blend yourself of one or two mushrooms of choice, such as 1-2tsp Reishi, 1-2tsp Cordyceps, 1-2tsp Chaga, or 1-2tsp Lion's Mane. DIRECTIONS - In a large pot, sauté the onions, bell pepper, and garlic in oil. Right before they caramelize, add the water or stock. Add the sweet potato, carrots, mushrooms, ginger, ginseng, + dates/licorice (optional). I usually use a proportion of 1:3, and allow 1/2 of water to evaporate to have a rich stock. Let it simmer for an 1-2hr for it to become a rich broth. For variety, you can add other vegetables, proteins, or even seaweed (yum!) -Add the adaptogenic 🍄’s half way of the simmering process. Our mushrooms are already extract powders, no need to over-boil like raw mushrooms. - In a about 1.5-2hr, turn the heat off, and add the miso + herbs of choice (fennel, cilantro etc). Mix it well, say a prayer, and enjoy!

Drool worthy salad by @_foodstories_ No matter what time of year, day or time it is, I crave a kale salad with a medicinal 🍄/garlicy/creamy tahini dressing. All of these ingredients are simply made for each other. Who’s with me?! I guess I’m a true kale addict. Here’s an incredible and easy recipe and dressing for your high vibrational enjoyment 🥗 . Kale Salad with Tahini Dressing Ingredients for 4 persons Kale Salad 5 red onions 5 tbsp olive oil 7-8 stems of kale salt & pepper Small handful of mushrooms 2 small apples 1 pear 1 pomegranate Sprinkle walnuts . Tahini Dressing 1 piece of ginger (about 2cm) 2 cloves of garlic 4 tbsp tahini 2 tsp honey 1/2tsp Reishi powder (or Cordyceps!) salt & pepper . . Preheat oven to 200°C/400°F. Peel and quarter the onions. Place the onions on a baking tray with baking paper and brush with vegetable oil, then bake for about 20 minutes. Meanwhile, wash the kale, dab dry and tear into bite-sized pieces (do not use the stem). Then put the kale in a salad bowl, salt well and add 3 tablespoons of olive oil. Massage the kale with your hands for approx. 2 minutes. Clean the mushrooms, cut into slices and fry in some vegetable oil, then salt and pepper. Wash and quarter the apples and pear, cut out the core and cut the fruit into thin slices. Halve the pomegranate and remove the seeds. . For dressing, peel ginger and garlic and finely chop. Mix with tahini, honey and some water to get a dressing. Season with salt and pepper. Mix the kale with mushrooms, fruits, baked onions and walnuts. Enjoy!! . . . . 📷 @_foodstories_
