Makes 1 loaf
Ingredients:
For the Dough:
- 3 cups bread flour, plus extra for dusting
- 2 tsp instant yeast
- 1 tsp fine salt
- 1 tsp sugar
- 2 eggs
- ½ cup warm whole milk
- 7 Tbsp unsalted butter, softened and cubed
For the Pesto:
- 1 large bunch fresh basil
- 2 large handfuls black kale (cavolo nero), tough stems removed
- 1–2 cloves garlic
- ½ cup raw cashews
- 3 Tbsp hemp seeds
- ½ cup good olive oil, plus more to loosen
- fine salt to taste
For the Filling:
- 1 Tbsp Liver Vitality Greens powder
- ¾ cup sundried tomatoes in oil, drained and roughly chopped
- 5 oz feta, crumbled
Instructions:
1. Make the dough: Mix the flour, yeast, salt, and sugar in a large bowl. Add the eggs and warm milk and mix until a shaggy dough forms. Knead for 8–10 minutes by hand or 5 minutes in a stand mixer until smooth and elastic. Add the butter a few pieces at a time, kneading well after each addition until fully incorporated. The dough will be soft and slightly tacky.
2. First rise: Shape the dough into a ball, place in a lightly oiled bowl, cover, and leave to rise at room temperature for 1–1.5 hours until doubled. Alternatively, refrigerate overnight and bring back to room temperature before shaping.
3. Make the pesto: Blanch the black kale in boiling water for 60 seconds, drain, and squeeze out as much water as possible. Blend the kale with the basil, garlic, cashews, hemp seeds, and olive oil until you have a rough paste. Season well with salt. Stir in the Liver Vitality powder.
4. Roll and fill: On a lightly floured surface, roll the dough into a rectangle roughly 14 x 10 inches. Spread the pesto evenly all the way to the edges. Scatter over the sundried tomatoes and crumbled feta.
5. Roll and cut: Starting from the long edge, roll the dough into a tight log. Use a sharp knife or bench scraper to cut the log in half lengthways, so you have two long strips with the layers exposed. Twist the two strips around each other, keeping the cut sides facing up throughout.
6. Shape and second rise: Transfer the twist into a greased 9x5 inch loaf tin, tucking the ends under. Cover loosely and leave to rise for 45–60 minutes until puffy.
7. Bake: Heat the oven to 375°F (190°C). Brush the top lightly with olive oil or a beaten egg. Bake for 35–40 minutes until deep golden on top. If it browns too quickly, cover loosely with foil for the last 10 minutes. Leave to cool in the tin for 15 minutes before turning out.
This babka is best eaten the day it is made, still slightly warm. It reheats well the next day: 10 minutes in a low oven. Slice thickly and enjoy!
