Ingredients
Blue Ice Cubes:
- 1 cup coconut water
- 1 tsp Anima Mundi Butterfly Pea Flower Powder
Fresh Coconut Milk:
- Flesh of 1 young coconut
- ¾ cup coconut water (from the same coconut)
- 1 Medjool date, pitted
- 1–2 tsp desiccated coconut (for the coconut cream layer)
The Latte:
- 1–2 tsp Anima Mundi Butterfly Pea Flower Powder
- Fresh coconut milk (from above)
- Blue ice cubes
Optional additions:
- ¼ tsp Anima Mundi Vanilla Powder
- 1 tsp Dirty Rose Chai Collagen Booster or Original Collagen Booster
- Blue Lotus flowers, to garnish
Method
Blue ice cubes (make ahead):
- Whisk the Butterfly Pea Flower Powder into the coconut water until fully dissolved and evenly coloured.
- Pour into ice cube trays and freeze for at least 4 hours.
Fresh coconut milk:
- Crack open the young coconut and reserve the water.
- Scoop out the soft flesh.
- Blend the coconut flesh, ¾ cup coconut water, and date on high for about 60 seconds until completely smooth and creamy. Strain through a nut milk bag if you prefer an ultra-smooth texture.
- For the coconut cream layer, stir desiccated coconut through a portion of the coconut milk, or use store-bought coconut cream for whipping.
Assemble:
- Using a frother, whisk the Butterfly Pea Flower Powder into a small amount of coconut water until dissolved, then slowly add the coconut milk and froth to incorporate.
- Fill a glass with blue ice cubes.
- Pour the butterfly pea coconut milk over the ice.
- Slowly add the coconut cream down the side of the glass to create a layered effect.
- Garnish with Blue Lotus flowers and serve immediately. Stir gently before drinking to blend the flavours, and add a natural sweetener of choice if needed — agave or stevia work well without affecting the colour.
