RECIPE

  • Prep time: 24-72 hours
  • Cook Time: 40 minutes
  • Cooling Time: 20 minutes
  • Method: baking
  • Yield: 1 loaf
  • Category: bread
  • Recipe by: Katrina Niesen, The Sourdough Mama

Sourdough Ingredients:

  • 1/2 cup (100g) starter
  • 1 1/3 cup (320g) water
  • 1/8 cup (50g) honey
  • 1 2/3 tsp (10g) salt
  • 1/2 cup (75g) freshly milled flour (or sub bread flour)
  • 3 1/4 cup (425g) bread flour
  • 1 tsp + 3 tsp Golden Sun Milk

Flower Cup Ingredients:

  • 1/4 cup (35g) bread flour
  • 1/16 cup (20g) water
  • 1/2 tsp Rose powder
  • 1/2 tsp purple sweet potato powder
  • 1 Tbsp melted butter
  • sprinkle of salt

Sourdough Directions:

  1. Mix all your ingredients together.
  2. Perform four sets of stretch and folds every 30 minutes. During the last three sets, sprinkle 1 tsp of Golden Sun Milk evenly over the dough before folding to create a marbled interior and enhance the golden milk flavor.
  3. Allow your dough to properly ferment by covering and letting rest—this varies for everyone, but it will roughly take about 8 hours. Then shape your dough.
  4. Cold-proof for 12–72 hours.
  5. Preheat oven to 430°F.
  6. Coat the exterior with flour or Thai rice flour for a smooth, white surface. Lightly wet the dough, then sprinkle the flour on top and rub it in.
  7. Score your dough, or get creative and try shaping it into a daffodil, as seen in the images.
  8. Bake for 20 minutes covered, then about 20 minutes uncovered.
  9. Let loaf cool before eating. Enjoy!

Flower Cup Directions:

Make a dough using the ingredients listed above. Roll the dough out flat and refrigerate for 30 minutes. Cut into strips and shape into a flower. Bake for 20 minutes at 350°F.
