Iced Golden Moon Milk Latte with Beetroot Coconut Foam & Saffron Threads

Golden, iced, and impossibly elegant — this is the drink you make when you want to feel genuinely nourished rather than just caffeinated. Soaked almonds blended with Medjool dates, saffron, ghee, Ashwagandha, and Golden Moon Milk until the whole thing turns a pale, shimmering gold. Strained smooth, poured over ice, and finished with a beetroot-blushed coconut cream that sits proud above the rim.

It's the kind of drink that makes the afternoon feel like a ceremony.

The base takes about ten minutes to blend and strain. The overnight almond soak is the only real planning ahead. Everything else is immediate. The beetroot coconut cream whips up in minutes and keeps in the fridge if you want to make it ahead, though it's best the day it's made.

Prefer it warm? Skip the ice and gently heat the strained almond base in a small saucepan until steaming. Don't boil. Pour into a mug and spoon the beetroot cream on top. It's just as beautiful, and on a cold evening, considerably more comforting.

One small detail that makes a big difference: bloom the saffron strands in a splash of warm water before blending. The color deepens, the flavor opens, and the base comes out a richer gold than if you add the strands dry.

Ingredients

Golden Milk Base:

Beetroot Coconut Cream:

  • 120ml cold coconut double cream
  • 1 Tbsp honey or syrup
  • 1 tsp beetroot juice (or a few drops beetroot dye)
  • A few saffron strands, to finish

To Serve: plenty of ice — or warm, as a mug drink (see note above)

Method

  1. If using saffron strands, soak them in a splash of warm water to bloom before blending. If using saffron powder, skip this step and blend it straight into the mix.
  2. In a high-speed blender, combine the drained almonds, dates, Ashwagandha, Golden Moon Milk, bloomed saffron with its soaking liquid, ghee, and the optional vanilla and cardamom. Top up to 1 litre with cold filtered water and blend on high for 1–2 minutes until completely smooth and pale gold.
  3. Pass the blended mixture through a nut milk bag or fine muslin cloth into a jug or bottle, squeezing out as much liquid as possible. Since you're using cold water, the base is ready to use straight away — no need to chill.
  4. In a chilled bowl, whip the coconut cream with the honey until it holds soft, billowy peaks. Fold in the beetroot juice a little at a time until you reach a pale blush-pink swirl. Don't over-mix. You want a marbled effect rather than flat pink.
  5. To serve iced: Fill two tall glasses generously with ice. Pour the golden almond milk base over the ice, leaving room at the top. To serve warm: Gently heat the strained base in a saucepan until steaming and pour into mugs.
  6. Spoon or pipe the beetroot coconut cream on top so it sits proud above the rim. Scatter over a few saffron strands to finish. Serve immediately with a straw or spoon to stir through before drinking.
