Carrot Ribbon Salad with Moringa, He Shou Wu & Curam

Four ingredients, five minutes, and a dressing that does more than dress a salad. Long ribbons of raw carrot tossed in a loose green-gold emulsion of lemon, olive oil, Moringa, He Shou Wu, and Curam, scattered with toasted black sesame seeds and left to sit for five minutes until the ribbons soften just enough to absorb the flavour. It’s a side dish, a snack, or a base for whatever else is on the plate — and it’s one of the more intentional things you can do with a carrot.

Ingredients

Method
  1. Toast the black sesame seeds in a dry pan for 1–2 minutes until fragrant. Set aside.
  2. Whisk together the lemon juice, olive oil, Moringa, He Shou Wu, and Curam until a loose, green-gold dressing forms. It will be vibrant.
  3. Toss the carrot ribbons through the dressing and season with salt. Leave to sit for 5 minutes — the ribbons will soften slightly and absorb the flavours.
  4. Serve scattered with toasted black sesame seeds and fresh herbs if using. The lemon boosts iron absorption from the whole meal.
