Pumpkin Caramel Golden Milk Latte Cake

Pumpkin Caramel Golden Milk Latte Cake

A cake for the sun and the moon, made for the season when darkness takes a little more of the day. Cinnamon-spiced pumpkin layers are stacked with a white chocolate mousse scented with Golden Moon Milk and finished with a drizzle of Golden Sun Milk caramel. It’s warmth and softness in the same slice.

The Moon Milk mousse is the cool, quiet half. White chocolate, cream, and ground vanilla bean are whisked into a ganache, then folded into whipped cream until it’s light and cloud-like. The Sun Milk caramel is the warm half. It’s a deep amber caramel spiced with an energizing chai blend, poured over the top just before serving. Between them sit three tender pumpkin layers that taste like a latte in cake form.

With the clocks turned back and evenings drawing in, this is a cake for candles and slow gatherings. It’s a showpiece, so finish it with candied ginger, cinnamon sticks, and blue lotus flowers. They look lovely, but they’re for decoration, so remove them before slicing.

What's In The Cake

Golden Moon Milk is the lunar side of the cake. It’s an evening blend of Turmeric, Reishi, Ashwagandha, Blue Lotus, Cardamom, Lavender, and Vanilla, traditionally used to support relaxation and a grounded evening ritual.* Melted into white chocolate, it gives the mousse a soft floral warmth.

Golden Sun Milk is the solar side. It’s an energising adaptogenic chai of Turmeric, Cinnamon, Cardamom, Maca, and Cordyceps, traditionally used to support vitality, focus, and adrenal balance.* Whisked into the cream before it meets the hot sugar, it turns a classic caramel into something deeper and spiced.

Vanilla, Pure Ground Bean is organic whole ground vanilla bean from Papua New Guinea. A teaspoon in the mousse adds flecks of vanilla and a fragrant depth that extract can’t match.

Blue Lotus flowers finish the cake as a garnish. They’re traditionally revered as a calming, dreamlike botanical, and they float on top like small moons.*

Method

Pumpkin cake:

  1. Heat the oven to 350°F. Grease and parchment-line three deep 6-inch or three 8-inch round cake pans.
  2. Whisk the dry ingredients together, then add the wet ingredients and whisk just until smooth. Divide among the pans.
  3. Bake 8-inch layers for 30–35 minutes. Deep 6-inch layers will need longer. A tester should come out with a few moist crumbs.
  4. Cool completely and level the tops.

Golden Moon Milk mousse:

  1. Combine the white chocolate, Golden Moon Milk, vanilla bean, and ¼ cup cream. Microwave for 30 seconds, or until the cream is hot. Whisk smooth and cool to room temperature.
  2. Beat the remaining 2 cups cold cream with the sugar to stiff peaks.
  3. Gently fold in the cooled ganache.

Golden Sun Milk caramel:

  1. Whisk the cream with the Golden Sun Milk and set aside.
  2. Heat the sugar and water over medium heat, stirring until dissolved. Increase to medium-high and boil without stirring, brushing down the pan sides with water, until deep amber.
  3. Carefully add the butter and cream mixture. It will bubble vigorously. Cook, stirring, until smooth, then cool completely.

Assemble:

  1. Pipe the mousse between the cake layers and over the top. Refrigerate until serving.
  2. Just before serving, drizzle with the caramel and garnish with candied ginger, cinnamon sticks, and blue lotus flowers. Remove the sticks and flowers before slicing.
