We like our brownies dark, fudgy and flourless. Is that your vibe too? These Black Bean Brownies with Liver Vitality and Schisandra Rose sit at the top of this week's herbalist-vetted menu, and they might just change how you think about a chocolate craving.
There's no butter, no oil and no flour here. Black beans and eggs form the base, rich cacao brings the depth, and the whole batter comes together in a blender in under five minutes.
We created this recipe with the perimenopause years in mind, when cravings can feel louder and you want treats that work with your routine rather than against it. Think of it as dessert that feels like a little ritual of care.
The Herbal Pantry Behind the Bake
A simple recipe lives or dies by its ingredients, and four Anima Mundi staples do the heavy lifting in this one.
Heirloom Cacao Powder is the heart of the brownie. With no butter to carry flavour, the cacao has to be deep, rich and smooth on its own, and it is. It gives the batter its glossy, almost truffle-like finish and that intense dark-chocolate taste we're after. Keep a bag in the pantry for hot cacao, smoothies and baking alike.
Liver Vitality disappears into the batter, adding an earthy depth that pairs naturally with dark chocolate. Blending it into a treat you already love is one of the easiest ways to fold herbs into your everyday routine, no extra step required. It also works stirred into smoothies, lattes and energy balls.
Schisandra Rose Elixir as the finishing touch. Schisandra berry has a long history in traditional herbal practice and is known as the "five-flavour berry" for its sweet, sour, salty, bitter and pungent notes. Paired with rose, a few drops after baking add a bright, floral lift that cuts through the richness of the chocolate. Try it in sparkling water or tea too.
Anima Mundi Rose Buds and Petals as pure decoration, pure joy. A scatter of rose turns a tray of brownies into something you'd proudly serve at a gathering, and they're lovely steeped as a gentle floral tea.
RECIPE
Prep time: 15 minutes
Bake time: 20–25 minutes
Makes: 12–16 squares
Ingredients
- 1 can (400g) black beans, drained and rinsed
- 5 large eggs
- 1¼ cups Anima Mundi Heirloom Cacao Powder
- ½ heaped cup Anima Mundi Liver Vitality
- 1 tsp vanilla
- ½ cup maple syrup (or stevia, to taste)
- ½ tsp salt
For The Topping
- 100g high-quality dark chocolate, roughly chopped, to top
- 2 Tbsp cacao nibs, to top
To Finish
- Anima Mundi Schisandra Rose Elixir, a few drops, to finish
- Anima Mundi Rose Buds and Petals, to finish
Method
- Prep the tin. Heat the oven to 180°C (160°C fan). Line a 20 cm square tin with baking paper, leaving some overhang so you can lift the brownie out later.
- Blend the base. Add the black beans, eggs, maple syrup (or stevia), vanilla and salt to a blender. Blend until completely smooth, with no bean texture left at all.
- Add the cacao and herbs. Add the cacao and Liver Vitality and blend again until the batter is thick and glossy. Scrape down the sides once if needed.
- Top it. Pour the batter into the tin and smooth the top. Scatter the chopped dark chocolate and cacao nibs evenly over the surface.
- Bake. Bake for 20 to 25 minutes, until the edges are set and the centre still has a slight wobble. Don't overbake.
- Cool. Leave to cool completely in the tin. The brownie firms up as it cools, so resist cutting early.
- Slice and finish. Lift out using the paper and slice into squares. Drizzle a few drops of Schisandra Rose over the top and finish with rose buds and petals.
Tips for the Fudgiest Result
- Watch the bake closely. With no butter or oil, this brownie dries out quickly if overbaked. Pull it while the centre still wobbles slightly.
- Blend until silky. A smooth batter is what makes these taste like classic brownies, not beans. A high-speed blender helps, but any blender works if you give it time.
- Finish after baking, never before. Adding Schisandra Rose once the brownie has cooled keeps its flavour bright and floral. Use as many drops as feels right.
- Serve slightly chilled. They're at their fudgiest straight from the fridge.
Storage: Keep in an airtight container in the fridge for up to 4 days.
Easy swaps: Use stevia in place of maple syrup for a lower-sugar version. Swap the cacao nibs for chopped walnuts or hazelnuts if you prefer more crunch.
